紅茶専門店ディンブラにいらっしゃるお客様から、「家で紅茶を淹れると渋くなってしまうんですがどうしたらお店で飲むみたいに渋くならない紅茶を淹れられるんですか?」と、たびたび質問されます。 このような時は、お客様に紅茶の蒸らし時間や、お湯の温度的なことを伺っています。 紅茶の美味しさの一つに心地良い渋味があるのですが、顔が歪んでしまうほど美味しくないと感じる渋みもありますよね。それでは美味しい茶葉を購入しても残念なことになりかねません。渋くなる紅茶の淹れ方には、共通点があるなと感じます。 紅茶専門店ディンブラ流に渋くならない紅茶の淹れ方3ポイントをお伝えできればと思います。 知らないと損する渋くならない紅茶の淹れ方 ①お湯の温度 材料 1人分の紅茶(ブラックティー) ・茶葉BOPタイプ ティースプーン2杯 ・湯 350cc 日本の場合、水は水道水(浄水器)をやかんに勢いよく注ぐ。 お湯を沸かすときは、大きな気泡がぐつぐつ立つほど沸騰させないように注意します。酸素が抜けた湯で紅茶を淹れると紅茶の旨味が抽出されないからです。 理想温度は95℃~98℃です。100℃に近いとベストです。 沸騰してくると小さい気泡が立ってきます。それから少し大きな気泡が浮き始めたタイミングで温めておいたポットに湯を注ぎます。 この時酸素が十分に入るよう高い位置から注ぐことがポイントです。 ②蒸らし時間 セイロンティーBOPタイプの茶葉の蒸らし時間は3~4分です。 OPタイプでは5~6分です。 これはあくまでも目安なので茶葉の大きさや性質によって蒸らし時間は調整します。 蒸らし時間が短いと旨味が足りなく渋みも強く出てしまいます。 蒸らし時間よりポットの中で上手くタンニンとカフェインが結びつくようにジャンピングが起きるかどうかが大切なポイントだと思います。 ③ジャンピング 先ずジャンピングが起こりやすいように、まん丸いポットを用意します。 ジャンピングとは、ポットの中の茶葉が上下運動をしながら紅茶の旨味を出していく運動のことです。...
