At Sinchon Ranch, cows are pastured all year round, and milk is taken from dairy cows raised in a natural environment. I made clotted cream early in Japan. It was milk with a texture that feels slightly sweet. Tea with milk is more fragrant and delicious, and it cuts cleanly, and it is the flavor of tea with milk that I tasted when I went to Scotland in June.
