how to make chai

I would like to introduce how to make easy and delicious chai.

It is just how to make tea specialty store Dimbura (Isobuchi) style.

[Approx. 350cc for 1 person]

Put water (approximately 150cc) in a small pot, add 2 heaping teaspoons of UVA BOP type, and heat.

Simmer until the tea leaves open and the tea smells good . This process is the important point.

If you add the milk before the tea leaves have opened, the aroma and taste will not come out easily, and you will not be able to make a satisfying chai. Don't rush and enjoy making it slowly.

When the tea leaves open and you can smell the black tea, add milk (about 200cc).

Continue pouring until the desired color is achieved.

When bubbles rise to the bottom of the pot and rise, turn off the heat. Never bring to a boil. The trick to making delicious chai is to turn off the heat just before it boils .

If you boil it, the smell of burnt protein (sulfur smell) will become stronger.

When it's done, use a tea strainer to pour it into a teacup or pot.

Points when making chai (stewed milk tea)

Fine tea leaves such as BOP type and Dust 1, which are easy to extract aroma and taste, are suitable.

However, even if it is too fine, I personally feel that the scent is not enough. Because I want to enjoy the good aroma of black tea even with stewed milk tea.

The most important point is to open the tea leaves well to extract enough tea extract before adding milk. Another thing is to not bring the milk to a boil.

If you boil it in a pot until the tea leaves open, the amount of water will decrease a little. If you like, add water before adding milk, or if you like a milky feel, try making it with more milk.

The amount of tea leaves and the ratio of water and milk are only guidelines.
