I came to LANGAGE FARM, a clotted cream factory. Clotted cream came from the Arab world and was made from camel's milk. It has a long history and has been known since BC, but we do not know when and who brought it to England and spread it.

It is made by heating raw milk over low heat, skimming the milk fat from the casein protein that rises to the surface, and cooling it until it becomes soft and solid. One liter of milk yields only a few dozen grams, making it a very expensive cream.
There are jersey, english freeger, and holstein cattle in England, but here we use milk from jersey cows. Here too, I put plenty of clotted cream (fresh!) on top and tasted it.
