Yesterday evening, Mr. Koyama from Marukyu Koyamaen in Kyoto came to visit us out of the blue. We've been friends for 25 years now. A long-established store that specializes in matcha, boasting over 300 years of history. The first meeting was 25 years ago, and it was a conversation I will never forget.
When I visited the factory for the interview, it was the season when new tea was being produced, and the factory was extremely busy. Despite this, many customers carefully explained the process and invited tea masters.
What left the biggest impression on me was, “We have built up a history in the tea ceremony, which is part of the traditional culture of Japan. Since then, matcha has been used in a wide range of fields, including ice cream, sweets, cooking, and soft drinks. History and tradition create authenticity in ingredients, and familiar flavors evolve.
Mr. Koyama taught me this, and my black tea is also ground to a microscopic level using a mortar at Mr. Koyamaen's factory so that it can be used as an ingredient in sweets and cream. At first, it would be a problem if black tea dust mixed in with matcha.
I made a corner that was isolated all the way and made tea powder. There are also confectionery manufacturers who say that they cannot make good cream without this powder. Tea is also evolving with the support of various people. Even though it hadn't been three years, it felt as close as if it had happened last week. An important friend for life.
