Kiribat

Recently, coconut oil has become popular among women for its health, beauty and diet benefits. Miranda Kerr's habitual use also made it popular, and these days you can even see it in supermarkets.

I haven't tried it yet, but it seems that there are various ways to use it, such as adding it to salad dressings, stir-fries, yogurt and hot drinks.

I have heard that it is good for your health and would like to try it once. Coconut is not very familiar in Japan, but it is a very common and familiar ingredient in warm Sri Lanka. Oil is used for stir-frying, and in fact, milk is used for flavoring curry and other dishes and as an ingredient in desserts.

During last year's Sri Lanka tour, we ate a lot of coconut dishes such as curry and watra bread, but the one I liked the most was the coconut milk rice called " Kiribat ". (Kiri = milk bat = rice) This kiri bat is made by boiling rice in water, adding coconut milk and salt just before it is cooked, and mixing. According to our guide, Ranjit, it is similar to the Japanese red rice that is often eaten at celebrations such as New Year's and weddings.

In Japan, coconut has a strong image of being used for sweets, so I wonder if this milk rice is also sweet. I'm not good at rice pudding, okay? I eat kiribat with lunumiris (a spicy paste made from chili peppers and salt), and the natural sweetness and creaminess of the coconut go well with rice. The spiciness and saltiness of the Lunumiris is a perfect match, and the dessertiness disappears, and it goes well with the curry.

Some places served it with rice like black rice. It was a taste I had never encountered in Japan, but every time I saw it at the buffet, I ate it as an in-flight meal on my way home.
